Alana Toulin is a Ph.D. candidate in US history at Northwestern University. Her dissertation, “Open Tables: Restaurant and Reform in Progressive Chicago,” considers how Chicagoans from across class, gender and ethnic and racial lines experienced and shaped their city’s public dining culture in the late 19th and early 20th centuries.
